Okay, I feel the title of this post covers most questions. But, just in case there are any. . . yes, it does taste like the cookies we all love at Panera.
No, I will not be conducting a side by side taste comparison personally because. . . um . . . GLUTEN. Ha. So, without further ado, the recipe for Gluten Free Panera Shortbread.

- 2 sticks of room temperature butter
- 1/2 teaspoon vanilla
- 1/2 teaspoon baking powder
- 3/4 cup confectioners/ powdered sugar
- 2 cups of your choice of gluten free flour. I've had splendid results with this.
Next, we need to add everything to our mixing bowl! Put the butter in first, and use a pastry cutter to break it up. Add all of your dry ingredients, then add your vanilla. It should look something like this right now:
Now, for the fun part ;) You'll need to HAND KNEAD all of this together. It simply will not work properly if you don't. After you've kneaded it all together it will look a bit like this:
Boom. You're ready to put it in a pan. Simple. Right? ;)
I'm using a cookie sheet with raised edges, and flattening my shortbread dough to about 1/2 an inch thickness.

At this point, you COULD throw it in a 325 oven for twenty minutes or until the edges are brown and call it a day OR you could be an overachiever like myself and put the pretty imprint on your cookies like Panera does.

Cut one to the size of your pan, and press it onto the dough.

Carefully remove it from your dough. It should look like this:
See the pretty diamond pattern? That's what we wanted. Give yourself a pat on the back. ;)
Throw the pan into your oven and bake for twenty minutes as mentioned above.

Pretty. Right? Now, cut your huge cookie apart. Unless you'd rather eat it as one huge cookie, I promise I won't judge. I didn't cut them straight. So, shoot me. They tasted fine and that's all that truly matters.
Now sit back and enjoy your delicious gluten free shortbread with a cup of chai. Or shnarf it out of the pan. Again, no judgment here. ;)
